A coffee shaped by fruit and fermentation in equal measure. Bright, green, and unmistakably playful.
Grown by Edison Argote at Quebraditas farm in Oparopa, Huila, this lot starts with cherries hand-selected at a minimum of 80% ripeness, then floated to remove any defects before processing begins. The coffee undergoes 24 hours of oxidation in sealed, anhydrous-grade containers, followed by dry pulping and a 72-hour submerged fermentation alongside yeast, kiwi, and lulo, a combination designed to draw real fruit character into the cup rather than layering it on after the fact.
Once fermentation finishes, the coffee dries for 76 hours at a controlled average temperature, then rests in GrainPro bags to lock in freshness until it's ready to ship.
In the cup, kiwi and lulo lead clearly, framed by citrus and a bright lemon edge that keeps everything feeling crisp. Caramel sweetness sits underneath, balancing the green fruit character without dulling it. The body stays soft and light, and the finish is clean and pleasant, fading gently rather than lingering.
