Grown in Acevedo, Huila, at 1,750 masl, this lot reflects the attentive cultivation and post-harvest precision of producer Jhon Wilmer Cuellar, a fourth-generation farmer focused on clarity and repeatable quality.
SL28 is prized for its aromatic intensity and transparent acidity, making harvest timing and drying control essential. After selective picking, ripe cherries are meticulously sorted and dried whole using a natural process. As moisture slowly reduces, fruit sugars interact with the seed, building layered sweetness and floral lift. At Las Brisas, drying is managed with careful attention to airflow and environmental stability, ensuring sweetness develops without overshadowing the variety’s inherent elegance. Once optimal moisture is reached, the coffee rests before milling to preserve structure and consistency.
