Grown in Acevedo, Huila, at 1,700 masl, this lot reflects the careful, variety-driven approach of producer Jhon Wilmer Cuellar, a fourth-generation grower focused on clarity, structure, and repeatable quality.
Ombligón responds dramatically to processing decisions, making precision essential. After selective harvesting, whole cherries are meticulously sorted and dried intact using a closely monitored natural process. By allowing the fruit to remain around the seed, sugars gradually interact with the bean, building layered sweetness and depth. Drying conditions, airflow, temperature, and moisture are carefully managed to prevent over-fermentation and preserve cup transparency. Once optimal moisture is reached, the coffee rests before milling to protect the integrity of the variety.
