Produced by Wilton Benitez in Cauca, Colombia, this Pink Bourbon undergoes two carefully controlled fermentation stages, beginning in whole cherry before a second stage after pulping builds even more sweetness and complexity. During that second fermentation, the coffee's own fruit juices are reintroduced, a closed-loop process that enhances flavour naturally rather than relying on anything added. After washing, the coffee is gently dried before being decaffeinated using the sugar cane process, chosen for its ability to preserve the coffee's vibrant character while removing the caffeine.

The result is the kind of decaf that makes you do a double take. It reminds us of Pink Starburst, watermelon, and lychee—bright, juicy, candy-like, and bursting with tropical sweetness. It's playful, expressive, and proof that decaf doesn't have to sit on the sidelines.
