This Caturra comes from Andres Martinez at El Sendero in Nariño, Colombia, grown between 1,750 and 2,000 masl. Andres has a background in biochemical engineering, which is a fairly convenient thing to have when your job involves fermentation, coffee processing and obsessing over very small details.

Nariño’s high elevations and cooler growing conditions allow coffee cherries to mature slowly, building plenty of sweetness and complexity before harvest. That gives this coffee a pretty good starting point before anyone comes along and removes the caffeine.

Decaffeination happens in Colombia using the EA sugarcane process. Ethyl acetate derived from fermented sugarcane is used to selectively remove caffeine while preserving as much of the coffee’s original character as possible.

In the cup, there’s plenty of sugar cane sweetness up front, followed by chocolate and a gentle citrus brightness that keeps everything clean. It’s smooth, balanced and sweet, without that unmistakable this is definitely decaf thing going on.
