A Small Shift in Our Coffee Lineup

If you've been browsing our coffees recently, you might have noticed something different.
A few names you recognize have stepped aside. Some new ones have quietly taken their place. The shelf looks a little different from what it did a month ago, and if you've been with us long enough to notice, we want to take a moment to talk about it honestly, not as an announcement, just as an update between us.
This isn't something we do lightly.
Every coffee we release has a kind of weight to it. Not in an overwrought way but in the sense that we've spent real time with it. We've brewed it across different mornings, adjusted grind settings, tasted it at different temperatures, and understood how it behaves when it's fresh versus when it's had a few days to settle. By the time a coffee appears on our shelves, we've lived with it for a while.
So when one steps away, it doesn't feel like a product rotating out. It feels like a season closing. And there's something genuinely bittersweet about that, even when it's the right time.
Why coffees leave
The honest answer is that most coffees leave because they have to. Coffee is agricultural it follows harvest cycles, limited lots, and the reality that a specific batch of beans from a specific farm in a specific year is finite. When it's gone, it's gone.
Sometimes a coffee we love sells through faster than expected, which is a good problem to have and still a loss to feel. Sometimes a lot simply reaches the end of its peak window, and continuing to release it wouldn't be fair to you or to the coffee. Sometimes the farm produces something different the following season, similar, but not quite the same, and we have to decide whether the new lot belongs in the lineup on its own terms.
We always make these decisions carefully. And we always feel them a little.
What's arriving
The coffees coming in now reflect where we are at this particular moment, what we've been finding most expressive, what's been arriving with exceptional quality from origin.
Some of what we're introducing runs a little brighter than what we've been offering recently. A bit more vibrant in acidity, a little more clarity in the cup, the kind of coffee that feels like it's presenting itself clearly and asking you to pay attention. These tend to work beautifully as pour-overs, especially as they settle into their ideal post-roast window.
Others lean in the opposite direction: softer, warmer, the kind of cup that doesn't demand much of you and gives a lot back. These are the coffees that become daily companions, reliable in the best possible sense.
We're not trying to push the lineup in one direction or force a particular identity. We're just choosing what's genuinely tasting best right now, and trusting that honesty is more useful to you than curation for its own sake.
What stays the same
The way we choose hasn't changed. We still cup everything slowly, across multiple days, in multiple brew methods, before anything appears. We still taste with the question of whether you'll still find it interesting two weeks into the bag not just in the first cup, but on the quiet Wednesday morning when you're not paying special attention to it.
We still care about the relationship between roast date and flavor development. We still rest coffees before releasing them, because we know that CO₂ off-gassing affects how the cup tastes, and we want what you receive to be close to its best from the moment you open it.
And we still think of the coffees we offer less as products and more as introductions. We're introducing you to something someone grew, processed and cared about, and we take that responsibility seriously.
If something you loved is gone
We understand that it can be frustrating. A coffee becomes part of your morning, and then it isn't there anymore. That's a real thing.

Tell us what you loved about it: the flavor profile, the weight, the way it felt in the cup, and we'll do our best to point you toward something in the current lineup that scratches a similar itch. We won't always have an exact substitute, but we'll usually have a direction worth exploring.
