This lot is sourced from smallholder producers in Ethiopia’s Yirgacheffe region, where coffee is grown in rich highland soils at elevations reaching 2200 masl. At these heights, cherries mature slowly, building the density and sweetness that give Ethiopian coffees their clarity and complexity.
A blend of local heirloom varieties undergoes an extended anaerobic wine process, designed to deepen fruit character while preserving structure. After fermentation, the coffee is dried carefully on raised African beds, allowing the profile to settle into a cup that feels both vivid and composed.
In the cup, black lemon brings a deep citrus brightness, followed by the rounded sweetness of ripe banana. A red wine-like character runs through the finish, adding depth and a gentle, tannic structure that gives the coffee its distinctive shape. Despite its expressive profile, the cup remains balanced, with fruit and sweetness unfolding in a measured way.
