Wilton Benitez has a reputation for coffees with processing protocols that occasionally require a diagram. This is not one of them.

Grown at La Macarena in Piendamó, Cauca, this lot brings together Castillo and Caturra grown at around 1,900 masl. La Macarena is one of Wilton’s three farms and spans 75 hectares planted with 26 different coffee varieties, with much of the post-harvest work taking place at his Granja Paraíso 92 processing facility.

For this lot, the focus is a fully washed process. The cherries are carefully selected and sorted before being depulped and washed, followed by controlled drying. It’s a considerably more straightforward approach than some of the experimental processing Wilton is known for, giving the varieties themselves a little more room to do the talking.

In the cup, chocolate milk gives it a soft, sweet base, with peach bringing a little brightness and sugar cane carrying that sweetness through the finish. It’s clean, balanced and very easy to drink, with enough fruit to keep things interesting without taking over the cup.

Basically, Wilton Benitez without needing to explain anaerobic fermentation to your parents.

Why We Chose This Coffee

We love a weird coffee. We also really like coffee that just tastes very good.

This one falls firmly into the second camp.

It has all the precision we’ve come to expect from Wilton, but in a much more approachable package. Chocolate, soft stone fruit and plenty of sweetness make it easy to brew and even easier to keep drinking.

Nothing particularly wild happened to it.
